Porridge/Congee - Minced Meat Congee

Porridge or Congee for Breakfast or Lunch

Congee or porridge -- is simply cooked by boiling rice in more water.


People with poor digestive systems should cut down on their intakes of oily food and consume more congee, it helps promote digestion.

Congee for breakfast - will set up energy for the rest of the day! Many has agreed to this saying. But nowadays, a lot of people also have congee for lunch or dinner.

Recently i had tried a simple and fast way of cooking congee. My family members love it, so, would like to share with you. Hope you like it too!

Congee
Minced Meat/Shredded Chicken Congee 


Ingredients:
1 cup rice (8 cups water)
slices of ginger
chicken meat (shredded)
1 stalk of celery (cut into small pieces)
6 to 8 scallops (optional)

Methods:
  1. Rinse the rice (2 to 3 times) and cooked it (inside rice cooker - porridge mode).
  2. Soak scallops in 1 cup water. Add slices of ginger, cooked under slow fire for 10 mins.
  3. Add a little salt and cornstarch to your chicken meat and mix well.
  4. Pour in the cooked scallops, then add shredded chicken, stir and let it cooked well.
  5. Serve with sprinkled celery.
