Homemade Orange Balsamic Chicken set meal
(Set include: Orange Balsamic Chicken + Yogurt Coleslaw + Spicy Potato Wedges)
We have a taste of KFC dishes last Friday after a long break of staying away from all fast food. Oh my goodness, the chickens were fingers licking good, the potato wedges and coleslaw so yummy!Today I decided to try out the whole set of meal we had at KFC with a bit of homemade taste from coleslaw, potato wedges to balsamic chicken (instead of fried chicken).
Conclusion is, not too bad for a beginner, it taste 'just like it', heh heh heh....

Homemade Yogurt Coleslaw

A
1/4 medium size cabbage
1/4 medium size lettuce
1/2 carrot
1 onion
B
2 1/2 tbsp mayonnaise
1 tbsp plain yogurt
2 tbsp milk
a dash of black pepper
a pinch of salt
1 tbsp apple cider vinegar
2 to 3 tsp of lemon juice
Preparation:
1. Cut or shred all the above A ingredients into fine pieces.
2. Combine B ingredient well.
3. Pour B combine into the veggies and mix well.
4. Cover it up and put in the fridge for about 4 to 5 hours before serving.
Homemade Spicy Potato Wedges

3 to 4 potatoes
3 tbsp flour
1/2 chicken stock
1 tsp chilli powder
1/2 tsp turmeric powder
Preparation:
1. Preferably get some non starchy potatoes (those potatoes with loose skins are not so starchy)
Wash well and cut them into halves and then quarter it.
Boil them in hot water with a bit of salt for about 10 to 15 mins.
2. Mix the flour, chilli powder and turmeric powder well before putting them in a zipped bag.
3. When the potatoes are cooked, drain the water and towel dry them immediately.
Then, put the cooked potatoes into the floured zip bag and give it a good shake.
Shake off the remaining flour, take out and transfer them into another zipped bag.
After that, put in the freeze for at least 4 hours before deep frying it.
Orange Balsamic Chicken

2 pieces of chicken breast
(preferably with skin on)
1 orange
2 tbsp balsamic vinegar
a bit of butter
Preparation:
1. Sprinkle a bit of salt on both side of the chicken breast and let it rest.
2. Cut the orange into 6 slices (with skin on).
3. Heat up the pan and put some oil and put in oranges and chicken, cooked the chicken till skin turned brown.
4. Transfer the chicken and bake it for 20 mins at 300 degrees.
5. In the pan with the oranges, pour 2 tbsp of balsamic vinegar and cook it with a bit of butter.
6. Take the chickens from the oven and brush it with the above cooked vinegar sauce in the pan.
7. Serve with steamed broccoli.
