Homemade Banana Bread


The bunch of bananas we bought 2 days ago had ripen so fast that seem like going to waste, so I mashed them up and made them into delicious banana bread. The next time you have over ripen bananas you can try out this easy simple recipe for your family.

Mashed bananas
Ingredients A:
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt

Ingredients B:
170g butter
3/4 cup brown sugar
2 eggs
2-3/4 cup mashed banana


Banana Bread

Preparation:
1. Preheat oven to 170 degrees. Greased loaf pan.
2. Combine flour, baking soda and salt well. Then set it aside.
3. Cream butter and brown sugar well and stir in 2 lightly beaten eggs. Blend well.
4. Pour the above banana mixture to the flour mixture. Stir well but not over mix.
5. Pour into the loaf pan and bake for about 1 hour.

 Fried Egg Tofu

This is an improved version for egg tofu.

Grind meat, prawns and fish fillets

Ingredients:

3 egg tofu
8 - 10 pcs prawns
3 fish fillets
chicken meat/meat
1/4 pc green capsicum (cut into tiny cubes)
1/4 pc carrot (cut into tiny cubes)
1 shallot (cut into tiny cubes)
1 egg
1 Tbsp corn flour
1 Tbsp oyster sauce
1 Tbsp sesame oil
1 tsp salt
1 tsp pepper

Method:


1. Minced meat, prawns and fish fillets.
2. Mashed egg tofu and mix with (1).
3. Add in corn flour, oyster sauce, pepper, salt and egg, combine well.
4. Pour in a well oiled rectangle bowl and steam for 15 minutes.
5. When cool, cut into smaller pieces. (You may keep some in freezer for future use).
6. Coat with corn flour and pan fry or deep fry till golden brown.

Try this no egg whites Kaya Jam!  


Ingredients:

50g palm sugar
40g sugar
4 egg yolks
200ml coconut milk
pandan leaves

Coconut Egg Jam
Kaya Jam/ Coconut Egg Jam
Preparations:

1. Chop the palm sugar into smaller pieces.
2. In the saucepan, put in palm sugar, sugar, coconut milk to cook over medium heat.
3. Add in pandan leaves (tied in knots) and let it simmer. Turn off heat,
4. Separate egg whites and yolks, then slightly beat up 4 egg yolks.
5. Slowly pour the coconut mixture into the egg yolks and stir well,
6. Double boil it and continue stirring the mixture in medium heat until mixture thicken,
7. Let it cool down and discard pandan leaves,
8. Scoop into clean dry container.
9. Toast your bread and spread a thick layer of kaya jam and top it with a slice of butter.

Baking - Pumpkin Muffins

Here are my 2 recipes of pumpkin muffins, try it out and see which suits you more.
Pumpkin Muffins
Steamed Pumpkin Muffins

Recipe 'A'

125g pumpkin puree
80g brown sugar
1/2 tsp salt
100g coconut milk
1 egg
30g olive oil
200g cake flour
1-1/2 tsp double action baking powder

Method:
1. Cut pumpkin into small pieces, steam for 15 minutes, then mashed it into puree.
2. Mix flour and baking powder. Sieve and set aside.
4. Preheat steamer and let the water boiling.
5. Beat egg till foamy, add sugar, salt and stir till sugar dissolve.
6. Add coconut milk, oil and pumpkin puree, stir well.
7. Pour the above mixture into the sifted flour and combine well.
8, Scoop 2 -3 tablespoon of mixture into muffin cups 3/4 full.
9. Steam over high heat for 15-20 mins.

Recipe 'B'

Steamed Pumpkin Muffins

A ingredients
50g flour
50ml water
1 tsp instant yeast
(Mix the above ingredient and cover up, set aside for 30 mins)

B ingredients
200g pumpkin puree
1 egg
100g brown sugar
100ml milk/coconut milk
200g flour
2 tsp baking powder

Set steamer over boiling water.

Method:
1. Stir 2 tsp baking powder into flour, sift and set aside.
2. Combine pumpkin puree, egg, sugar and milk/coconut milk.
3. Add in sift flour to the mixture and stir well.
4. Add the above 30 min mixture A and combine well. The mixture should be sticky.
5. Fill muffin cups to almost full.
6. Steam over boiling water for 15 mins.

I bet you will sure to be happy and smiling away the minute you lift up the steamer lid.

Ingredients:
2 eggs
water (2x of eggs)
1 tsp chicken stock
a pinch of salt
1/4 tsp sugar
1 tsp of sesame oil
spring onion

Method:
1. Beat up the 2 eggs.
2. Water is twice the volumn of the 2 eggs.
3. Add chicken stock, a pinch of salt, sugar and stir well, pour into the beaten eggs.
4. Use a sift to drain the mixture into a bowl.
5. Add 1 tsp of sesame oil to it.
6. When the water is boiling, put the bowl in and steam for about 15 to 20 minutes.
7. Sprinkle spring onion when it is done.

Tofu Dish - Steamed Tofu

Ingredients:


1 pack of tofu
200g of minced meat
1 onion, finely chopped
1-2 clove garlic, finely chopped
1-2 shitake mushroom
1 spring onion
1-2 chillis (optional)
1 Tbsp corn starch
6 Tbsp water
2 Tbsp black soy sauce



Method:
1. Marinate minced meat with 1 tablespoon of oyster sauce + 1 tablespoon of light soy sauce.
2. Cut mushroom into small cubes.
3. Steam tofu for about 10 mins, drain the water from plate and put aside.
4. Fry garlic, onion till fragrance. Add in minced meat and shitake mushroom.
5. Put in 6 tablespoon of water with black soy sauce and 1/2 teaspoon sugar and let it boil.
6. Stir in with 1 tablespoon of water to 1 tablespoon of corn starch and let it cook for a while.
7. Pour the minced meat over the steamed tofu.
8. Garnish with chopped spring onion and chilies.
